Sea Trail Ladies Golf Association (STLGA) is open to any lady who owns property at Sea Trail (home, condo, lot) and is an 18 hole golfer. The league is also open to non-golfers who can join as non-voting Social Members. Every Wednesday year around is STLGA play day.

SESAME CHICKEN SALAD
Here's the recipe for the delicious salad served at the Memorial Tournament!
SESAME CHICKEN SALAD
1 pkg (16 oz) bow tie pasta
1 c. vegetable oil
2/3 c. white wine vinegar
2/3 c. teriyaki sauce
1/3 c. sugar
½ t. pepper
3 cans (11 oz each) mandarin oranges, drained
2 cans (8 oz. each) sliced water chestnuts, drained
2 c. cubed cooked chicken
1 1/3 c. honey roasted peanuts
1 pkg (9 oz) fresh spinach
1 pkg (6 oz) dried cranberries
6 green onions, chopped
¼ c. sesame seeds, toasted
Cook pasta according to package directions; drain and place in large bowl.
In small bowl, combine oil, vinegar, teriyaki sauce, sugar and pepper. Whisk together and pour over pasta and toss to coat. Cover and refrigerate for 2 hours or more.
Just before serving, add the remaining ingredients; gently toss to coat. Makes approximately 20 servings.
Note: The sesame seeds can be toasted in the microwave. Place on a plate and I would do them 30 seconds at a time until they are light brown.

Welcome Letter 2012

Dear Member:
Welcome to our new season. Let's hope the winter months this season are kinder to us and give us opportunities to play in more comfortable weather.
I would like to take this opportunity to welcome Sue Hunady back to STLGA. Ellen Lehrer and Jeanette Ebel have moved up to full membership, and we look forward to seeing them out there having fun with us.
If you haven't paid your membership dues, we will assume you do not intend to join STLGA this year and we'll remove your name from the list.
Your Sunshine Gals are Diane Carcich, Carol Humphreys and Gloria Lee. If you know of someone in need of a warm and friendly "thinking of you" note or card, or just some good cheer, give one of them a call. They will make sure some special thoughts are sent to that person.
While a good job was done at the Annual Luncheon signing up for the monthly pairings and special events, it was not good enough. We still have a few spots to be filled. November is open and we need someone to work with Mary Fox in December.
Doesn't anyone want to jump in and oversee the Member-Guest? Without a Chairperson there won't be a Member-Guest. Let's make this an easy year for Pat and Diane (for those who don't know it's Diane Scheck). If those spots aren't filled before our meeting in January, we will be there looking for your signature.
Mary Alice will be at the January meeting also looking for volunteers. We have a couple of coffees, two socials, a cookout, two lunches with one being the Memorial which STLGA will be hosting this year, and one dinner. Please show us your expertise and be ready to sign up to host one of these events.
Our historians Ruth Apalinski, Marge Layden and Carrie Wiles will be looking to take your pictures, so be ready to smile!
Have any worthy news to report? Give Kate Goodrich or her side-neighbor, Kaye Evans, a call and they'll make sure it gets in the "heard around the bag drop" article,
maybe even the Beacon.
And at the end of this season we will be rewarded with the shopping skills of our Awards Committee, Ellen Bombolis (a true shopper) and Barbara Lawson.
Linda and Joan are going to continue to count your Birdies and Chip-ins, Pat (Sutton) will be doing Broadcast e-mail. Our Chaplains are Myrt Klein, Elaine Poston and Gloria Wimmer. And watch out, Sharon (Winter) is counting the times you play. Our mentors are Mary Couch and Cheryl Campbell. Brunswick 25 - Pat (Gooding), Interclub - Nadine (Cybyske), and Ladybirds, Madeline with the assistance of Joan Mason. Not to be forgotten is our Rules Person, Pam Fisher and Parliamentarian, Paula Jones.
So now you have our line -up. Come out and join us and have a fun-filled season of golf.
Merry Christmas and a Happy and Healthy New Year. For those traveling, have a safe journey.

Southwest Chicken Salad and Dressing...Diane Kreuzburg
SOUTHWEST CHICKEN SALAD
Salad -
4 c. cubed, cooked, chicken
2 cans (15.25 oz) corn
1 c. chopped roasted sweet red peppers
1 c. red onion, chopped
½ container grape tomatoes
1 c. minced fresh cilantro
6 c. chopped romaine, baby spinach, spring mix or mixture of any of these
½ c. sliced almonds
Dressing
3 T. lime juice
3 T. olive oil (or combination olive & vegetable oil)
4 t. honey
2 t. ground cumin
1 t. salt
1 t. chili powder
½ t. ground pepper
In a large bowl combine the Salad Ingredients.
In a small bowl whisk together the dressing ingredients. Just before serving pour over salad and toss to coat. Sprinkle with almonds. Serves 10 - 12

Fresh Strawberry Upside Down Cake...Diane Kreuzburg
FRESH STRAWBERRY UPSIDE DOWN CAKE
2 c. crushed fresh strawberries
1 (6 oz.) pkg. strawberry flavored gelatin mix
3 c. miniature marshmallows
1 pkg yellow cake mix, prepared as directed on package.
Preheat oven to 350. Spread crushed strawberries on the bottom of a 9 x 13 baking pan. Evenly sprinkle strawberries with the dry gelatin powder and top with mini marshmallows.
Prepare the cake mix as directed on package and pour on top of the marshmallows. Bake in preheated oven until a toothpick inserted into the center comes out clean, about 40 to 50 minutes. Cool in the pan for 15 minutes. Based on bakers who made this cake, it will come out of the pan easier if you let it cool for at least an hour. Run a knife around the pan to loosen the sides, and turn the cake out onto a serving tray. Store cake in the refrigerator.
Note: a few notes from the reviews on this cake. It is very important that you crush the strawberries really well to release the juices so the juice can mix well with the dry gelatin. You may even want to use a food processor or blender.
Another suggestion was if the berries don’t seem too juicy to sprinkle them with a little sugar and let them sit for 30 minutes or so. Apparently the sugar draws out some of the juice. Hope this won’t be a problem for us and we won’t need to do this.

Your 2011 STLGA Committees and What They Do…
Awards: Marti Kennedy and Gloria Wimmer set out to find the neatest gifts for our Club Champion, Flight Winners, special awards, outgoing officers, and even find time to buy something special for all STLGA Members. Thanks to their shopping we all have a set of markers to circle all of those birdies and chip-ins.
Birdies & Chip-Ins: Someone has to keep track of those circled birdies and chip-ins so that at the end of the year the Award Committee knows who to buy the gifts for. Joan Mason and Linda Perna are the gals who tally this information and keep us updated throughout the year.
Broadcast E-Mail: The President, Pat Sutton, takes care of this and ensures that membership is updated on all the news and information regarding STLGA in a timely manner. Be sure to let her know if your email address changes.
Brunswick 25: Pat Gooding is our representative to this golfing around group. If your index is 25 or lower and you would like to play different courses, give Pat a call. There are 10 scheduled events and the cost to join the group is $25. The schedule and cost of events are listed on http://stlga.blogspot.com/.
Chaplain: How lucky we are to have Myrt Klein and Gloria Wimmer leading us in prayer before our meals together. They both know just the right thing to say.
Data Base: Sharon Winter takes on the task of keeping track of how many times we all play golf on STLGA’s league day. That’s how we know who played the most rounds each year, and who is eligible for specific tournaments. Be sure to let her know if any of your information in the Sea Trail directory changes.
Historian: Someone has to keep track of all of our activities, both social and golf outings, so Marge Layden and Lynn Wiedman can always be found with a camera to document it all. They also take care of putting all of the pictures in albums, so we can see how young we once looked.
Hospitality: This is a huge job and our Member At Large, Mary Alice Jerome, heads up an ever changing committee of people who plan our menus, set up the socials, shop for the food or arrange for a caterer, and clean up our mess. The Hospitality Committee is truly made up of you, the STLGA members.
Interclub: Nadine Cybyske is our contact person for yet another “off campus” golf group. The North Strand Ladies Interclub consists of six clubs: Black Bear, Long Bay, Meadowlands, Sandpiper, Sea Trail and Carolina National. We play a Modified Stableford Net format six times during the year at each club with 10 players from each club. Eligibility to play is a member in good standing of STLGA with five rounds of play and a 36 handicap index.
Lady Birds: Our Vice President, Jo Ann Barton, coordinates this activity. The Ladybird team consists of ten players. Anyone with a handicap index of 40 or lower can sign up. The players are flighted according to their handicap. It is a low gross, low net, and low putts tournament played at Ladybird member courses. Points are awarded to the STLGA players for participating and winning. At the end of the year, there is a Championship competition. The eight players who earned the most points during the year represent Sea Trail in this tournament. A sign -up sheet will be posted on the bulletin board in the Jones/Byrd computer room three weeks prior to an upcoming tournament. You can check out the schedule on http://stlga.blogspot.com/.
Member/Guest: Our annual invitational tournament finds Joan Mason at the helm this year. Duties include amassing a large committee to assist with invitations, prizes, gifts, a luncheon, and many other details to help make our guests feel special. This themed event is held in June and is a favorite so it fills up quickly.
Mentor: Our new members are welcomed by Mary Couch and Sandy Reynolds so that they will know all of the ins and outs of playing with STLGA and feel comfortable with all of us. A new member handbook that answers all of the questions a new member may have has been newly updated this year by Mary and Sandy.
Parliamentarian: Mary Lou Miller keeps all of us on track with Robert’s Rules of Order. She does attend our monthly Board Meetings as well, but does not vote on issues at these meetings.
Publicity: Each month you will find an article in the SeaTrailer entitled Heard Around the Bag Drop that contains newsworthy information and reminders about our league. Kate Goodrich makes sure timely information is placed there for you. She also sends our weekly results into the local newspaper. If Kate is on vacation, Denise Reiner will step in for her.
Sunshine: With over 140 members, STLGA has to keep up with sending cards to our members whether in good times or in bad. Virginia Foulds and Kathy Ivey are our Sunshine Girls and ask that if you know of someone who needs a card to please give them a call and let them know. They are also the ones who will be collecting your $1 for our 50/50 drawing.
Rules: And…last, but certainly not least, are our rule gals…Pam Fisher and Anna Marie Kozel. If you have a question on a rule, be sure to give them a call. We now have a spot on our blog page for a Monthly Rule Spot. Check it out!!

Requested Recipe from Memorial Tournament
The following is the salad dressing that Diane Kreuzburg made for the Memorial Tournament:
CREAMY CAESAR DRESSING
3 cups mayonnaise
½ c. egg substitute
¾ c. parmesan cheese, fresh, shredded
4-5 T. olive oil
6 (or more to taste) T. lemon juice
1 can anchovies, finely chopped
8 garlic buds, chopped
4 t. Worcestershire
3 t. Dijon mustard
Salt and pepper, to taste
Mix all ingredients in a bowl. Beat with an electric mixer for two minutes. Cover and chill for several hours. Will keep in refrigerator for a week or more.
